Southwest Spaghetti (Squash)

This is a great recipe for spaghetti, spaghetti squash or a combination of the two.  If using spaghetti squash, stir it in with the zucchini.


  1 Lb Ground Beef                                                                   1/2 Tsp Salt
  1 Tsp Ancho Chili Powder                                                       1/2 Tsp Ground cumin
  2 1/4 C Water                                                                          6 Ounce Angel Hair Pasta, broken
  14.5 Oz Diced Tomatoes                                                         -in thirds
  2 Tsp Chili powder                                                                  2 1/2 Cup Zucchini, cut into chunks
  1/2 Tsp Garlic powder                                                            

In a large skillet, heat oil and add ancho chili powder.  Add beef and cook over medium heat until no longer pink; drain. Remove beef and keep warm. In the same skillet, combine the water, tomatoes, chili powder, garlic powder, salt and cumin; bring to a boil. Stir in spaghetti; return to a boil. boil for 6 minutes.  Add the zucchini. Cook 4-5 minutes longer or until spaghetti and zucchini  are tender, stirring several times. Stir in the beef and serve.
