Easy Pasta Sauce - Kathleen Ronk

In the fall when we had really ripe tomatoes that needed to be used, mom would make this sauce.  She would also occasionally make it in the spring with canned tomatoes.



  2 Tbl Olive Oil                                                                       3 Cups Tomatoes, Crushed
  2 Clove Garlic, Minced                                                           Salt, To Taste
  4 Pinch Pepper                                                                       Basil, To Taste
  1/2 Cup Onion                                                                        Oregano, To Taste

Place a large heavy pan over moderate heat.  Add the oil, garlic, pepper and onion.  Cook 5 minutes.  Add the tomatoes.  Reduce heat and simmer, stirring occasionally, for 10 minutes.  Season with salt,  basil and oregano.
