Anything is good, in moderation. I cook because I love to and because I can share with those around me. I crochet for the same reason.

Do what you want to do, enjoy what you do and use it to touch those around you.

Stove Top Chicken - no stuffing here.

This is a wonderful all in one meal with chicken and pasta.  Hoagie spread is simply jarred, chopped cherry peppers.  Use more or less to control the spiciness.  If you don't have orzo, use any pasta you like.



  2 Tbl Olive Oil                                                                1 Lb Chicken Breast, Boneless,
  2 Cloves Garlic, Diced                                                             -Skinless
  14 Ounce Diced Tomatoes                                              1 Cup Sweet Pepper, Diced
  1/2 Tsp Salt                                                                    2 Tbl Hoagie Spread
  1/4 Tsp Pepper                                                               4 Ounce Orzo, Cooked

Heat oil in a large skillet over medium-high heat. Add garlic and cook for 1 to 2 minutes, until lightly browned and fragrant. Add chicken and brown.  Stir in tomatoes with liquid, salt and pepper. Cook for about 5 minutes.
Add sweet peppers, onion and hoagie spread. Cook over medium-high heat, covered, for 5 minutes. Cook until internal temperature of the chicken registers 160 degrees on an instant-read thermometer.  Stir in cooked orzo and serve.
