I like to bake - and my nephews like peanut butter. My niece says she does not, but her affinity for buckeyes tells me differently, but that is a different story. These peanut butter bars are easy, tasty and do well in school lunch (if they last that long). I prefer to bake with Jif, and I do believe it makes a difference, so that is what is listed below.
1 3/4 Cup All Purpose Flour
1 Tsp Baking Powder
1/4 Tsp Salt
1 Cup Chunky Jif
3/4 Cup Butter, Softened
1 Cup Light Brown Sugar, Packed
2 Large Eggs
Heat oven to 350 degrees. Line a 9 inch square pan with parchment paper and coat with cooking spray. Set aside.
Combine flour, baking soda and salt in a small bowl, set aside.
In a medium bowl, combine peanut butter, butter and brown sugar. Beat on medium until smooth. Add eggs, one at a time, and mix well. Beat in flour mixture until just combined and press into pan. Bake about 25 minutes, until a toothpick comes out clean. Cool and enjoy.
