Anything is good, in moderation. I cook because I love to and because I can share with those around me. I crochet for the same reason.

Do what you want to do, enjoy what you do and use it to touch those around you.

Roasted Brussels Sprouts

 I wanted to make a different vegetable with Christmas and this sounded good.  It was - and it was well received (even by some of the kids)



1 1/2 Lbs Brussels Sprouts

4 Ounces Pancetta, diced

1/4 Cup Olive Oil

1 1/2 Tsp Salt

1/2 Tsp Pepper

Balsamic Glaze

Heat the oven to 400 degrees.  Trim and halve the brussels sprouts.  Toss with the pancetta, olive oil, salt and pepper.  Spread onto a baking sheet in a single layer.  Roast for 20 - 30 minutes, stirring once, until they are nicely browned.  Remove from oven and immediately drizzle with Balsamic Glaze and toss to coat.
