Anything is good, in moderation. I cook because I love to and because I can share with those around me. I crochet for the same reason.

Do what you want to do, enjoy what you do and use it to touch those around you.

Apple Salad

Make this with different colored apples, as specified, for more color or just make it with what you have on hand.  Apples are so good this year, you cannot go wrong.  Using different types, even of the same color, gives a nice depth of flavor.


  1 Large Yellow or Green Apple                                              1 C Miniature Marshmallows
  1 Large Red Apple, Diced                                                      2/3 C Flaked Coconut
  1 Tsp Lemon Juice                                                                 1/2 C Chopped Walnuts
  21 ounces Pineapple tidbits                                                     1/4 C Raisins
  1 Can Pineapple  (21 Oz) tidbits                                              1/4 C Mayonnaise

Dice the applies and, in a large bowl, toss with lemon juice. Drain pineapple and add to the bowl along with the remaining ingredients and mix well. Cover and chill for at least 1 hour.  Serves 10
