Potatoes and peppers from the CSA, pork chops on sale = baked goodness.
3 Cloves Garlic, Minced
4 Pork Chops
1 Tbl Oil
1 Tbl Herbs De Provence
Salt and Pepper to taste
2 Cups Bell Pepper - Large Dice
2 Cups Potatoes, sliced into 1/4 inch slices
2 Cups Milk, heated to almost boiling
4 Tbl Butter
1/4 Cup Cake Flour (may use AP)
Heat oil over medium heat in large skillet. While heating, sprinkle Herbs De Provence on the pork chops. Put the garlic in the skillet and place the pork chops on top, herb side down. Cook for 1 minute, sprinkling with salt and pepper. Turn. Cook 2 to 3 minutes and move to a casserole dish.
Put peppers into skillet and cook for 2 to 3 minutes, pour on top of pork chops.
Layer potatoes over peppers.
In a medium sauce pan, melt butter. Whisk in flour - making a roux. Slowly whisk in milk, pour over all.
Cover and bake for 1 hour.

Spiced Parmesan Pork Chops
We needed an excuse to make Creme Fraiche, so we invited Hubby's parents over for lunch. On the menu was pork chops, so I tried this.
1/2 to 1 Cup Parmesan
2 Large Eggs
2 Tbl Milk
1 Tbl Red Hot
1 Cup Italian Flavored Bread Crumbs
4 Pork Chops (preferably boneless)
Put 1/2 cup cheese in a large, flat bowl (add more cheese as necessary to complete coating). Whisk together Eggs, Milk and Red Hot then place in a second large, flat bowl. Place the bread crumbs in a third bowl.
Dip the pork chops in the cheese.
Dip the pork chops in the egg mixture.
Dip the pork chops in the bread crumbs and coat thoroughly.
Grill until 150 degrees then allow to rest for 5 minutes.

Pork Chop Bake
Mildly flavored, mushroomy pork chops. Can be made with 2 to 4 pork chops. I used black rice but you can also use long grain rice.
2 to 4 Bone-In Pork Chops
10 Ounce Cream of Mushroom Soup
1 1/4 Cup Water
3/4 Cup Uncooked Rice
1 Cup Cheddar Cheese
3/4 Cup Bell Pepper
4 Ounces Sliced Mushrooms Drained
1 Tsp Herbs De Provence OR your favorite Spice Blend
Heat Oven to 350 Degrees. Grease a casserole dish, set aside.
Brown Pork Chops lightly.
Put into bottom of prepared pan. Add water and rice to pan over medium heat.
Chop pepper, add to rice along with soup and mushrooms.
Stir to combine thoroughly, pour over pork chops.
Cover with foil and bake for 1 hour or until pork chops are tender.
