Anything is good, in moderation. I cook because I love to and because I can share with those around me. I crochet for the same reason.

Bruschetta Salmon

I like salmon.  Hubby likes it, but any fish must include tartar sauce.  Until now.

3/4 Lb Salmon
2 Cloves Garlic
1/2 Tsp Kosher Salt
1/4 Tsp Ground Pepper
Extra Virgin Olive Oil
1/2 Cup Basil (prepared as below)
2 Medium Tomatoes, sliced
1/4 Tsp Ground Pepper

Heat grill to 350 degrees.

Layer a piece of non stick foil on top of a piece of regular foil.  Fold edges together.

Remove scales and pin bones from salmon.  Place skin side down on foil.

Mince garlic.  Stir together with salt and pepper, using the side of a knife, until a paste forms.

Rub on salmon.

Lightly spray with olive oil.  Chiffonod the basil (roll leaves together and cut into strips across the roll).  Sprinkle onto the fish.

Place tomato slices on top of the basil.

Put foil onto the grill and cook until flaky - approximately 10 to 12 minutes.

Spicy Grilled Salmon

Big Green Egg + Spicy Mix + Salmon Steaks = YUM  I used dried, jarred ginger, not fresh.

Two 6 Ounce Steaks

In a bag, combine the following:
1/4 Cup Canola Oil
2 Tbl Soy Sauce
2 Tbl Black Cherry Balsamic Vinegar
2 Tsp Dark Brown Sugar
2 Tsp Red Pepper Flakes
1 Tsp Minced Garlic
1/2 Tsp Ginger
1/2 tsp sesame oil

Place salmon in the bag, remove all air and marinade at least 4 hours.  Preheat grill. 

Remove fish from bag, spray both sides with cooking spray then place on the grill.  Cook about 5 minutes per side until salmon flakes easily and has a consistent texture.

Wood Plank Spice Rubbed Salmon

Next up on our egg - wood plank cooking.  I purchased and soaked a cedar wood plank per the package directions.


While it was soaking, I made a spice rub for the salmon.  I mixed together the following:

1 tbl light brown sugar
1 tbl kosher salt
1 tsp ancho chili powder
1 tsp chili powder
1 tsp cumin
1 tsp black pepper

Once mixed, I started the grill and put it at about 325 degrees.

I had one large piece of salmon.  I rubbed the spice on the belly of the salmon.




I then let the fish sit while I put the wood plank on the grill for 3 minutes. 

After 3 minutes, the plank was turned and the fish was placed skin side down on the plank. 


The lid was closed and the salmon cooked about 20 minutes - the salmon flaked very easily with a fork.

Lime Crusted Fish

I used this crust on Salmon, but it would go well with Tuna as well.





  1 1/2 Tbl Salt                                                                           1 Tbl Olive Oil
  1 1/2 Tbl Black Peppercorns                                                    1 Tbl Lime Juice
  1 Tbl Grains Of Paradise                                                         Salmon
  1 Tbl Lime Zest                                                                      

Mix salt, peppercorns and grains of paradise and grind.  Mix with lime zest in a bowl large enough to hold your fish fillets.

In a small bowl, combine oil and lime juice.

Heat a heavy skillet over medium heat and coat with additional olive oil.
Cut fish into portions.    Brush belly with Oil and Lime Juice mixture and dip into salt mixture so there is a crust on the fish.  Place crust side down in the pan and cook about 4 minutes.  Brush skin side with olive oil mixture and turn gently, being careful not to knock off crust.  Cook until done.
