I didn't. A friend recently posted she could not wait until restaurants open because she wanted a dutch baby with fruit. I only knew one form of 'dutch baby' and they aren't eaten, so off to google I went. Turns out, it is a fluffy baked pancake. Pancakes are generally carb heavy, but these are not. They are great with syrup, fruit, jam, jelly, powdered sugar.....what else can you think of?
Please note - to get the proper puffing, the eggs must be room temperature. If you forget, put the whole egg in warm water for 5 minutes before cracking the shell.
4 Tbl Unsalted Butter, cut into pieces
3 Large Eggs
1/2 Cup Flour
1/2 Cup Milk
1 Tbl Sugar
1/4 Tsp Cinnamon
Pinch Nutmeg
Place cold, cut butter in the bottom of a 10 inch baking dish. Place in oven, turn oven to 425.
While the oven heats and the butter melts, put remaining ingredients in a blender and blend well.
When butter is melted, remove the pan from the oven.
Pour the batter in the pan, return to the oven. Bake for 20 minutes. Turn oven off, leave pan in oven for 5 additional minutes without opening the door.
If desired, sprinkle with powdered sugar. Serve immediately.

Breakfast Casserole
I made this as breakfast for dinner then we had leftovers for breakfast for several days.
1 Pound Sausage
3 Cloves Garlic, Minced
8 Large Eggs
1/4 Tsp Salt
1/4 Tsp Pepper
15 Ounces Shredded Hash Browns, thawed
2 Cups Cheese, shredded
12 Ounces Cottage Cheese
Heat oven to 350 degrees. Coat a 9 x 13 pan with cooking spray, set aside.
Cook the sausage. Cool. While cooling, sautee garlic in the pan. Add sausage and garlic to a food processor, pulse twice. Add eggs, salt and pepper. Run food processor for 2 to 3 minutes. Pour into a large bowl. Add cheeses and potatoes, stir well. Pour into a pan and bake for 45 to 50 minutes until set and slightly browned.

Braised Eggs
This was our recent 'breakfast for dinner' dish. It is very customizable - you can cook as many eggs as your pan will hold. Don't worry about leftover bean/sausage mix - chop up small amounts and scramble with eggs the next morning.
1 Pint Cherry Tomatoes
1 Tsp Olive Oil
1 Tbl Olive Oil
12 Ounces Breakfast Sausage
3/4 Cup Bell Pepper, cut into strips
1 Tsp Cumin
1 Tsp Chili Powder
2 Tsp Hot Sauce
1 Cup Salsa
15 Ounces Black Beans - rinsing and draining optional
Large Eggs - you choose the amount
Heat broiler on high. Cut tomatoes in half, place cut side down in a pie plate. Drizzle with 1 tsp olive oil.
Broil until slightly charred. Set aside.
Use a large skillet with a lid. Heat remaining oil over medium high heat. Add sausage and cook about 5 minutes, breaking into small pieces.
Add bell pepper and cook until sausage is done.
Reduce heat to medium, add cumin, chili powder, hot sauce, salsa and black beans.
Bring to a simmer. Make small wells in sausage mixture - enough to hold the eggs you want to cook. I made 5.
Add an egg into each well. Cove and cook for three minutes.
After three minutes, they will look like this.
Add tomatoes to the pan, avoiding the yolks.
Cover and cook another 4 to 6 minutes until egg whites are cooked and yolks are still runny. Remove from heat and serve with toast.

Joyful Almonds
I made this recipe for New Years. Coconut, almonds and chocolate....YUM. Make them egg shaped for easter.
1 Cup Almond Extract, Toasted 5
Ounce Shredded Coconut
3/4 Cup Sweetened Condensed Milk 2 Ounce
Coconut Powder
1 1/2 Tsp Almond Extract Chocolate
Candy Coating Wafers
Chop the nuts and, in
a bowl mix together the nuts, condensed milk, almond extract and coconut. Using
your fingers, press the mixture into balls about 3/4-inch round. Place
onto sheet trays and refrigerate for at least 1 hour.
After the balls have
set up, melt the chocolate wafers. Dip
into the chocolate to coat evenly and lightly. Place onto a parchment or foil lined sheet pan to dry.
