Individual Tropical Pudding

More egg yolks from cooking for a sick dog....more pudding.

1 1/2 Cups Heavy Cream
1 Cup Sweetened Cream of Coconut
1/2 Tsp Nutmeg
1/2 Tsp Salt
8 Egg Yolks
2 Large Eggs
1/2 Cup Sugar
1 Tbl Vanilla
1/2 Cup Flaked Coconut
1 Banana, peeled and mashed.

Heat oven to 300 degrees.

Heat Cream, Cream of Coconut, Nutmeg and Salt in a saucepan until small bubbled appear around the edge of the pan.

While heating, place egg yolks, eggs, vanilla and coconut in the bowl of a mixer.  SLOWLY add cream mixture to the eggs when heated.  Divide into 6 creme brûlée dishes.

Place dishes in a baking pan, pour enough hot water around dishes to come half way up the outside.

Bake 40 to 50 minutes or until set.

Refrigerate at least an hour.

Coconut Pecan Rice Pudding

Growing up, rice pudding was one of my favorite desserts.  Now, my dessert has grown up.  Don't like bourbon?  No need to use it.



1 c  Long Grain Rice
2 Cups Water
1 t  Vanilla
14 oz Sweetened Condensed Milk
12 oz Evaporated Milk
1/4 c  Bourbon
2 T  Light Brown Sugar
1 1/2 t  Cinnamon
1 c  Pecans,Chopped
1/2 c  Coconut

Combine rice and water in a large pan.  Bring to a boil, cover, reduce heat and cook 15 minutes   Combine rice, vanilla, milks, bourbon, sugar and cinnamon in a small slow cooker. 


Stir.

Cook on low for 3 hours.  Toast coconut and pecans, stir into pudding and enjoy!

Sweet N Spicy Corn Pudding

  Sweet corn is in season, chili peppers are in season, why not make this corn pudding?  Makes an excellent main dish or side dish.  Also makes pleanty for leftover lunches.  Add or remove chili peppers to your desired level of heat.  If you don't have cake flour, all purpose flour will work.



2 Tbl cake flour
2 tsp baking powder
4 large eggs
1 cup greek yogurt
1/2 cup 1/2 and1/2
1/2 cup 1% milk
1 Tbl sugar
4 cups corn
3 Tbl chili peppers, minced with seeds
1 cup bell pepper, diced
6 ounces sharp cheddar, shredded

Heat oven to 350 degrees.  Coat a 9 x 13 pan with cooking spray, set aside.

In a large bowl, combine the chili peppers, bell pepper, cheddar and 2 cups corn.  Set aside.

In a food processor, pulse the flour, baking powder, salt, eggs, yogurt, milk, sugar and the remaining corn.  Process until nearly smooth.   Pour over ingredients in large bowl, stir to combine.  

Pour the mixture into the prepared pan.

Bke until golden brown and set, about 50 to 60 minutes.  Let cool for 10 to 15 minutes before serving.
