Skyline Chili

If you have never had this, you must try it.  This is the only time I believe that spaghetti and chili go together. Traditional skyline chili also has an optional chopped onion topping, I do not list it as that would put my allergy over the edge.  However, you may feel free to do so.



1 Lb Ground Beef
1/4 Cup Onion, Finely Chopped
2 Cups Beef Stock
8 Oz Tomato Sauce
3 Tbl Chili Powder
2 Tbl Apple Cider Vinegar
2 Tsp Worcestershire Sauce
2 Tbl cocoa powder
4 Cloves Garlic, minced
1 Tsp Cinnamon
1 Tsp Cumin
1/2 Tsp Salt
1/2 Tsp Ground Red Pepper
1/4 Tsp Allspice
15 Ounce Kidney Beans

Required for serving:
Shredded Cheddar
Cooked Spaghetti


Brown ground beef and onion, drain.

Add beef stock, simmer 10 minutes.  Add remaining ingredients and simmer, uncovered, for 1 hour.  Add the beans and heat for another 5 minutes.  Serve over hot spaghetti, top with cheddar.

Chili - Dorothy Thomas

I was supposed to cook in a chili cook off this weekend, but my cough made me choose to bypass the event.  Hubby was, therefore, hungry for chili and asked for his grandmother's recipe.  It is typed as written below.  Please note the following: I only used about 1/4 cup onion due to an allergy, we doubled the Chili Powder and Hot Powder is Red Pepper (also doubled).



2 Lb Ground Beef
1 Tbl Salt
1 Med Onion
1 Tbl Sugar
12 Hot Pepper Flakes
1 Large Can Tomato Puree (about 28 ounces)
1 Can Water
2 Tsp Chili Powder
1/2 Tsp Hot Powder
2 Cans Kidney Beans

Brown Beef and drain.

Return to the pot and add remaining ingredients EXCEPT beans.  Cook for about 45 minutes.  Add the beans, cook for another 45 minutes.

Fire Fries

BEWARE - these fries are not for the faint of heart.  If you like spicy food, these are fabulous.



You'll Need:

4 Cups Potatoes cut in a French Fry Cutter

2 Tbl Olive Oil
2 1/2 Tbl Chile-Garlic Sauce
1/4 Tsp Ground White Pepper

Position rack in the lower third of the oven.  Heat to 450 Degrees.  Line a flat baking sheet with non stick foil, set aside.

Place potatoes in a large bowl (with a lid, if you have one).

Combine oil, chile-garlic sauce and pepper.


Pour over the potatoes and toss.


Spread potatoes evenly on the baking sheet and roast until tender, 20 to 25 minutes.

Sweet N Spicy Corn Pudding

  Sweet corn is in season, chili peppers are in season, why not make this corn pudding?  Makes an excellent main dish or side dish.  Also makes pleanty for leftover lunches.  Add or remove chili peppers to your desired level of heat.  If you don't have cake flour, all purpose flour will work.



2 Tbl cake flour
2 tsp baking powder
4 large eggs
1 cup greek yogurt
1/2 cup 1/2 and1/2
1/2 cup 1% milk
1 Tbl sugar
4 cups corn
3 Tbl chili peppers, minced with seeds
1 cup bell pepper, diced
6 ounces sharp cheddar, shredded

Heat oven to 350 degrees.  Coat a 9 x 13 pan with cooking spray, set aside.

In a large bowl, combine the chili peppers, bell pepper, cheddar and 2 cups corn.  Set aside.

In a food processor, pulse the flour, baking powder, salt, eggs, yogurt, milk, sugar and the remaining corn.  Process until nearly smooth.   Pour over ingredients in large bowl, stir to combine.  

Pour the mixture into the prepared pan.

Bke until golden brown and set, about 50 to 60 minutes.  Let cool for 10 to 15 minutes before serving.

Chili - Who Knew?

What I learned from Hubby recently is this - if I say I am making Chili, it is supposed to be red and made with Kidney Beans.  Unless, of course, it is White Chicken Chili.  Otherwise, if I say chili, he gets hungry for red kidney bean chili.  So, I wanted to make a meatless chili, this is what I came up with.

1 Tbl Garlic, minced
1 Tbl Olive Oil
29 Ounce Tomato Sauce
30 Ounce Kidney Beans, rinsed and drained
15 Ounce Canellini Beans, rinsed and drained
14.5 Ounce Diced Tomatoes
1 Tbl Cumin
1 Tbl Chili Powder
1/2 Tbl Ancho Chili Powder
1 1/2 Tsp Oregano
3/4 Tsp Black Pepper
1/2 Tsp Red Pepper

In a 4 quart pot, heat olive oil and cook garlic until fragrant.  Add remaining ingredients and simmer on low for at least an hour.  Goes great with cornbread - tryandlike.blogspot.com/2011/11/cornbread.html

Bean Chili

Fall is here, time for chili.  For a vegetarian dish, substitute vegetable broth for the chicken broth.  Serves 8.



15 Ounce Black Beans, rinsed and drained                                  1 Head Roasted Garlic
15 Ounce Dark Red Kidney Beans,  rinsed and drained               3 Tbl Chipolte Pepper In Adobo
15 Ounce Navy Beans, rinsed and drained                                               -Sauce, finely chopped
2 Cup Green Pepper, chopped                                                    1/2 Tbl Ground Cumin
2 Tbl Chili Powder                                                                     1/4 Tsp Salad Dressing
1 Tbl Ancho Chili Powder                                                         29 Ounce Petit Diced Tomatoes
14 Ounce Reduced Sodium Chicken Broth                                          
                                                    


Combine all ingredients in a 4 to 5 quart slow cooker and cook on low for 8 to 10 hours (high for 4 to 5).




Per Serving: 233 Cal (9% from Fat, 25% from Protein, 66% from Carb); 15 g Protein; 2 g Tot Fat; 1 g Sat Fat; 1 g Mono Fat; 41 g  Carb; 14 g Fiber; 4 g Sugar; 105 mg Calcium; 5 mg Iron; 894 mg Sodium
