Vegetable Casserole with Chicken

Who doesn't like a good casserole?  Especially when loaded with vegetables.



10 Ounces Frozen Spinach
10 Ounces Frozen Broccoli Spears
8 Ounces Boneless, Skinless Chicken Breast
10.5 Ounces Cream of Chicken Soup
2/3 Cup Greek Yogurt
1 Tsp Italian Seasoning
1/2 Tsp Salt
1/2 Tsp Pepper
2 Tbl Lemon Juice
1 Cup Cracker Crumbs
2 Tbl Butter


Heat oven to 350 degrees.  Spray a casserole dish with cooking spray.  Thaw Spinach, squeeze in a towel to remove as much moisture as possible.  Thaw Broccoli, chop.  Stir together, put in bottom of casserole dish.

Slice chicken.


Layer over vegetables.

Mix together Soup, yogurt, seasoning, salt, pepper and lemon juice.

Put over chicken.

Crush Crackers, mix with melted butter.  Put over soup mixture.  

Cover pan with foil.

Bake for 30 minutes.  Remove foil, bake for another 15 minutes.
