Anything is good, in moderation. I cook because I love to and because I can share with those around me. I crochet for the same reason.

Slow Cooker Beef with Broccoli and Peppers

The beauty of this is that all the ingredients could be fresh or frozen/canned.  The beef will slice more easily if it is partially frozen.  Remove large pieces of fat from the roast.  Makes 6 servings.





  1 Lb Boneless Beef Chuck                      1 1/2 Tbl Garlic, Minced
  1 Cup Beef Broth                                   2 Tbl Cornstarch
  1/2 Cup Soy Sauce                                 3 Cups Peppers
  1/3 Cup Brown Sugar                             12 Ounce Broccoli
  1 Tbl Sesame Oil                                                                    

Slice beef into strips and place in a small slow cooker.   


Combine broth, soy sauce, brown sugar, sesame oil and garlic.   

Pour over beef.  Cook on low for 6 to 8 hours.


In a cup, combine 1/4 cup sauce from slow cooker with the cornstarch.  Return to slow cooker and turn to high.


While cooking, slice peppers and steam with the broccoli until done.  When beef mixture has thickened, stir in vegetables and serve over rice.
