Sugar Cookie Pie

A coworker asked me if I had ever heard of a pie that tasted like a sugar cookie.  She was at a restaurant that offered many Amish Pies - including a sugar cookie pie.  SOOOOO, I went looking - right to the recipe book that my Aunt gave me many years ago.  Low and behold, to use her phrase, there was a recipe.  That pie recipe, along with the easy, made in the pan crust from the same book, go well together.





  9 Inch Deep Dish Pie Crust                                                      1/4 Cup Cornstarch
  3/4 Cup Sugar                                                                          1/2 Cup Salted Butter, cut up
  2 1/2 Cup Half & Half                                                             1 Tsp Vanilla
  1/8 Tsp Salt                                                                              1/4 Tsp Cinnamon
  1/4 Cup Brown Sugar                                                             

Heat oven to 350 degrees F.  While heating, make Easy Amish Pie Crust



   
Put in oven to bake while making the filling.


In a medium saucepan, combine granulated sugar, salt and the half-and-half.  Bring to boiling, stirring occasionally. Meanwhile, in another saucepan, combine brown sugar and cornstarch.  Gradually whisk in hot half-and-half mixture.  Add butter; over medium heat, cook mixture, whisking constantly, 5 minutes or until boiling and thickened. Simmer 1 minute.

Remove from heat and stir in vanilla and cinnamon, pour into pie shell.   


Bake 20 minutes or until top of pie is golden.  Place on wire rack; pie filling will be very loose but will thicken on cooling. Cool completely before cutting.
