Anything is good, in moderation. I cook because I love to and because I can share with those around me. I crochet for the same reason.

Do what you want to do, enjoy what you do and use it to touch those around you.

Spinach Stuffed Flank Steak

This steak makes a great dinner - and the leftovers are great chopped over a salad. 

1 1/2 lb Flank Steak
10 Ounce Frozen Chopped Spinach, Thawed.
1/4 cup Grated Romano
1/4 cup Cream Cheese

Line a baking pan with non stick foil.

Cut steak horizontally from long side, keeping attached with approximately 1/2 inch.  Open mean and place cut side down on a cutting board.  Cover with a flexible cutting board OR plastic wrap and pound to 1/4 inch thickness.  Remove top cutting board or plastic wrap.

Drain and squeeze spinach thoroughly.  Put in a small bowl and combine with cheeses.  Spread on steak to within 1/2 inch of edges. 


Roll, jelly roll style, so you are cutting across the grain when sliced.

Slice into 8 pieces.  Place on foil.  Broil approximately 6 inches from the flame, about 5 minutes until desired temp (160  for medium).
