Anything is good, in moderation. I cook because I love to and because I can share with those around me. I crochet for the same reason.

Do what you want to do, enjoy what you do and use it to touch those around you.

Corn Casserole

This is a very nice casserole to spotlight corn.  You can use fresh corn or frozen.  It is a very moist casserole that can be served as a side dish or alone.  If you do not have white pepper, you can use black pepper.

3 cups corn
1 tsp sugar
1 tsp vanilla
1/2 tsp cinnamon
1 teaspoon salt
1/2 tsp white pepper
2 large eggs, beaten
1 cup milk
1 tablespoon butter
1/4 cup Ritz cracker crumbs

Preheat oven to 350 degrees.

Mix all ingredients except butter and crackers together and pour into a 1 1/2 quart ungreased casserole dish.    Melt butter and pour over cracker crumbs.  Sprinkle on casserole.  Bake for 45 to 50 minutes until set.
