Anything is good, in moderation. I cook because I love to and because I can share with those around me. I crochet for the same reason.

White Beans and Tomatoes

This is a great dish and can be served either as a side or as a vegetarian main dish.  The nutrition information is for 8 side dish servings, main dish would be 4 servings.


  2 Tbl Olive Oil                                                                         -Drained And Rinsed
  2 Tsp Garlic, Minced                                                               1 1/2 Cups Tomato, Chopped
  40 Oz Great Northern Beans,                                                   2 Tsp Dried Basil

In a large skillet, heat olive oil and sauté garlic for about 3 minutes.  Stir in remaining ingredients and cook for 10 minutes.

Per Serving: 198 Cal (18% from Fat, 21% from Protein, 61% from Carb); 11 g Protein; 4 g Tot Fat; 1 g Sat Fat; 3 g Mono Fat; 31  g Carb; 7 g Fiber; 1 g Sugar; 83 mg Calcium; 2 mg Iron; 7 mg Sodium
