Anything is good, in moderation. I cook because I love to and because I can share with those around me. I crochet for the same reason.

Strawberry Cake


  4 Large Eggs                                                                  1.5 Tsp Salt
  2 Cups Sugar                                                                  2 Cups Strawberries, Chopped Fine
  1 Tsp Orange Zest                                                          ---Frosting---
  1 Tsp Orange Extract                                                     16 Ounce Cream Cheese, Softened
  3/4 Cup Vegetable Oil                                                     2 Sticks Unsalted Butter, Softened
  3 Cups All Purpose Flour                                                2 Tsp Vanilla
  4.5 Tsp Baking Powder                                                  2 Lb Confectioner's Sugar

Grease and flour 3 8 x 2 cake pans and set aside.  Preheat oven to 325.  Beat eggs in a large bowl.  Beat in sugar until light yellow in color.  Stir in Orange zest, Orange extract and Oil.  Mix Flour, Baking Powder and Salt into a separate bowl, slowly mix into wet ingredients.  Fold in strawberries.  Divide into three pans.  Bake 40 to 50 minutes until a toothpick comes out clean.  Remove from oven and place on a wire rack, cool  for 5 minutes and remove from pan.  Cool Completely and frost.

Frosting:
Beat cream cheese and butter until smooth.  Add vanilla and mix thoroughly.  Slowly add the sugar and mix  thoroughly.  If frosting is too stiff, add 1 Tbl milk.
